In a small saucepan, add the sugar and water and let it form a syrup. Remove the pan from the heat and let it cool a little.

In a bowl, mix the egg yolks without beating. Pour the syrup in a thin stream over the yolks, stirring quickly.

Put the mixture back in the pan, place over low heat, and stir in slow back-and-forth motions so the sweet does not turn cloudy.
