Stage 1
1
Lightly pound the steaks, place them in a baking dish and season with salt, mashed garlic and black pepper. Add some sprigs of parsley and chives, lightly crushed, and onion rings.
2
Cover and let rest for 1 hour.
Stage 2
3
Almost at mealtime, remove the steaks from the seasonings and coat them in breadcrumbs, then in the whole beaten eggs, and again in breadcrumbs.
4
Press them firmly into the breadcrumbs. Fry in very hot fat.
Stage 3
5
Sauce: put 1 tablespoon of butter with one grated onion on the heat to brown. Add the tomatoes, finely chopped without skins and seeds, and sauté well. Add the bay leaf and the tomato paste dissolved in a cup of beef broth or boiling water. Season with salt and pepper and let simmer slowly until it thickens and loses its acidity.
6
When it is ready, season with a few drops of lime or Worcestershire sauce and remove from the heat.
7
Place a slice of cheese on each steak, cover everything with the sauce, sprinkle with plenty of grated cheese, and bake in a hot oven for 10 minutes.
8
Serve right away.
