1
Put the flour and 3 eggs in a bowl. Stir until it forms a smooth dough.
2
Add a little heavy cream and let it rest for 20 minutes.
3
In another bowl, combine coarse salt with crushed white and black peppercorns, red pepper flakes, oregano, sugar, grated nutmeg, and chopped rosemary and thyme.
4
Pour the salt and herb mixture over the ribs and let them marinate for no more than 10 minutes.
5
Place them in a very hot skillet. Sear on both sides.
6
Remove the ribs and, in the same skillet, add the sliced red onion and garlic. Add rosemary, thyme, and a tablespoon of butter.
7
Return the meat to the pan, cover, and bake for 10 minutes (rare), 15 (medium), or 20 (well done).
8
To make the spätzle, add the resting dough little by little to a slotted spoon and, using another spoon, push the dough through the holes. Let it cook in the pot for 2 to 3 minutes.
9
Remove the spätzle and place them in a bowl of ice water to stop the cooking. Repeat until all the dough is used.
10
Take the spätzle out of the ice, dry them with a towel, and pour them into a skillet with butter. Let them get crispy on the outside and soft on the inside.
11
Remove the ribs from the oven and place them on a platter. Add to the pan, still with the onions and garlic, a little balsamic vinegar, red wine, flour, and butter.
12
To finish, cut the meat into pieces and arrange them on the plate. Spoon the sauce over the top, put the spätzle alongside, and serve.
