Cook 1/2 kg of potatoes with paio (Portuguese smoked sausage).

When the potatoes are cooked, pass them through a potato ricer.

Pour the mashed potato back into the water it was cooked in.

When serving, add the finely chopped collard greens and 1 tablespoon of olive oil.
