Remove the seeds and dice 3 large firm tomatoes (not too ripe, otherwise they get too soft), letting the tomato juice drain. In a separate bowl, make the sauce with 2 tablespoons regular ketchup, 1 tablespoon fresh finely chopped cilantro, Tabasco, and salt to taste.

Gently mix the sauce into the tomatoes and it's ready.
